Cinnamon and raisin loaf

The Jam has now taken responsibility for choosing the recipes as well as the mixing and pouring jobs! This morning I showed him a picture in my Hummingbird Bakery Cake Days book and suggested we do some baking. He turned over a few pages, looked at a few pictures then announced “This cake Mummy.” Luckily, I had (almost) all the ingredients…

After a quick internet search to find a substitute for soured cream – natural yogurt with a little bit of bicarb of soda – we got started. It’s easier than it looks. You just make one basic batter, add cinnamon to about a fifth of it and raisins to the rest, then swirl it together in the loaf tin. The marbling looks impressive, if I do say so myself…

We took a large, still slightly warm chunk with us when we visited a friend this afternoon. It’s lovely with a cup of peppermint tea (and probably nicer still if the Jam doesn’t steal all the raisins out of your slice!)
